What is Chicken Katsu?
Katsu, a typical breaded cutlet dish in Japan, is frequently made with either chicken or pig.
To make the chicken version, boneless chicken breasts are thinly sliced, dipped in flour, egg, and panko, and then deep-fried till golden brown.
This creates an enticing crunchy shell that yields the delicious meat inside while also protecting it.

Preparation
Step 1
Katsu sauce preparation: Combine all the ingredients in a small dish and stir well. It yields 2/3 cup.
Step 2
Chicken preparation: 1/3-inch of oil should be in a heavy skillet or large cast-iron pan. Until an instant-read thermometer reads 350 degrees, heat on medium.
Step 3
In three distinct, large plates or broad, shallow bowls, combine the flour, eggs, and bread crumbs.
Step 4
Salt and pepper chicken cutlets before serving. Dredge each cutlet in flour until completely covered, then shake off extra.
Both sides should be coated in egg, let excess drop off, and then firmly push into bread crumbs to coat. Repeat with the remaining 3 cutlets, then transfer to a clean platter.
Step 5
2 cutlets should be gently dropped into the oil and fried for about 2 minutes, or until brown below. Heat should be adjusted to maintain the food at about 350 degrees.
For 1 1/2 to 2 minutes longer, flip the chicken over and continue to cook it until it is golden on both sides and thoroughly done.
Add salt and transfer to a plate lined with paper towels to drain. Repeat with the other two cutlets.
Step 6
Transfer thick slices of the cutlets to plates. Alongside the katsu, divide the cabbage into mounds.
Some of the tonkatsu sauce should be drizzled over the katsu. Serve with additional tonkatsu sauce, lemon wedges, and small bowls of rice.
