Pumpkin Bread

Makes one 9x5-inch loaf (double to make 2 loaves)

1 2/3 cups (200 g of King Arthur's All Purpose) flour

1 teaspoon baking soda

¾ teaspoon salt

½ teaspoon cinnamon

½ teaspoon nutmeg

½ cup oil

2 eggs

1/3 cup water

1 cup canned pumpkin

1½ cups sugar

(Optional: nuts, if desired. I didn’t use them.)

1. Preheat the oven to 350˚.

2. Grease a 9x5-inch bread pan.

3. Mix flour, soda, salt, cinnamon and nutmeg in a bowl.

4. Make a well in this mixture. Pour in the oil, eggs, water, pumpkin, and sugar. Mix well with a sturdy spoon. (Add nuts if using.)

5. Pour into a greased baking pan. Bake for 1 hour or until done.
