WHITE YAM SOUP

Yield:2 gallons

Ingredient Amount

Garlic, minced 1 Cup

Shallot, minced 2 Cup

Chicken stock 2 gal.

Yucca, peeled and shredded 3 lb.

Fish sauce t.t.

Salt and sugar t.t.

Black peppercorns, crushed t.t.

Scallions, greens, chopped 4 bunches

Sesame oil as needed

31-35 shrimp, peeled cut into large dice 50 ea.

Method – MAKE THIS SOUP IN A STAINLESS STEEL POT NOT A WOK

1. Sweat shallots and garlic in a little oil.

2. Add chicken stock.

3. Add shredded yam

4. Season with salt/sugar, black pepper, fish sauce..

5. Just prior to service add shrimp pieces to hot soup and stir until they are cooked through.

6. Garnish with sesame oil and chopped scallions
