Ingredient Amount
AP flour 2 lb.
Boiling water 1 ¾ Cups
Cold water ¾ Cup
Sesame oil 2 Tbsp.
Vegetable oil 2 Tbsp.
Mise en Place
1. Place flour in a large bowl of a food processor or dough mixer. Add boiling water and mix until all water is absorbed.
2. Add cold water, knead until smooth dough is formed, cover dough, rest 1 hour.
3. On lightly floured work surface, roll out dough into large, round sheet 1’8” thick.
4. Cut dough into 3 ½ inch circles using a circle cutter.
5. Brush the tops of every other dough circle with sesame oil.
6. Sandwich circles, oiled sides facing into middle, allow to rest.
7. Roll the pancakes again to a 6-inch diameter.
At Service
1. Heat griddle or heavy frying pan, coat lightly with oil.
2. Cook pancakes on each side until light brown marks appear.
3. Remove from heat, immediately peel the pancakes apart.
4. Hold covered with heavy towel to trap warmth and steam….towel should not be wet.
