Ingredients Amounts
Minced meat (Pork,beef, chicken, duck) 5 #
Fried Shallots 4 Tbsp
Fried Garlic 4 Tbsp
Coconut Milk 1 cup
Basic Spice Mix 3/4 cup
Birds Eye Chilies, Minced 6 ea
Salt 2 Tbsp
Black Pepper, ground 1 Tbsp
Fish Sauce ¼ cup
Banana Leaves, 8x6” pieces 10 each (as needed)
(Will try house made nam prik instead of spice mix for test)
Basic Spice Mix:
Shallots 10 ea
Garlic 4 ea
Red jalepeno 2 ea
Galangal 2” piece
Fresh Turmeric 1” piece
Coriander seed, crushed 4 Tbsp
Shrimp paste 2 tbsp
Cloves 4 ea
Vegetable oil 1 cup
Method:
1. Combine ingredients for spice paste, grind to a paste, fry in vegetable oil
for 5 minutes until golden, cool before use.
2. Combine all ingredients except banana leaves. Mound 4 oz. Meat mixture
in each leaf, tie, steam for 10 minutes.
