Whole, unsalted butter 5#
Method
1. Set up a straining area with a Cheese cloth lined chinoise, a 2 oz. ladle, and a stainless bain marie
2. Unwrap butter and place in deep pot
3. Place pot on heat and melt butter gently
4. When butter has finished melting, increase heat and boil until fat becomes clear. Do not skim. When fat is clear and a golden fond develops on bottom of pot, strain butter through cheese cloth into bain maire. Cool and use as needed.
