Ingredient Amount
Cloves, ground ¼ oz.
Cardamom, green ¼ oz.
Cumin seeds, black ¼ oz.
Nutmeg, ground ¼ oz.
Mace, ground ¼ oz.
Bay leaves ¼ oz.
Cinnamon, ground ½ oz.
Ginger powder ½ oz.
Peppercorns, black ½ oz.
Cumin seeds ½ oz.
Rose petals, dried ½ oz.
Method
1. Mix all the ingredients except the ginger powder. Heat in a pan or a wok on low heat until nicely toasted. Put toasted ingredients in a grinder or pound in the mortar and pestle to a fine powder. Transfer to a clean, dry bowl, add ginger powder and mix well. Sieve and store in a clean, dry and air-tight container. Use as directed as per the recipe.
