Yield: 30 small portions
Ingredient Amount
Spinach, roots removed, stems on, washed 4 bunches
Soy sauce, light 3 Tbsp.
Garlic, minced 3 cloves
Scallions, thinly sliced 2 ea.
Sugar 2 tsp
Sesame oil 2 tsp.
Method
1. Bring a large pot of salted water to a boil over high heat, add the spinach, and blanch for 5 seconds and shock until cold. Drain and squeeze out excess water, transfer to a cutting board.
2. Coarsely chop spinach and set aside. Mix the remaining ingredients together in a small bowl. Add to spinach, and toss well.
