Ingredient Amount
Atta Flour 1.5 lb.
Salt 1 Tbsp.
Oil 3 Tbsp.
Water (warm) 12 oz.
Method
1. Place the flour in the bowl of a dough mixing machine, sprinkle salt and add the oil.
2. With machine set to speed #1,using a dough hook attachment, add water gradually and knead the dough until it is firm – about 5 minutes
3. Cover dough with a moist cloth and let it rest for 15 minutes.
4. Roll the dough a sheet 1/8” thick and cut out 3” circles.
5. Fry in cast iron skillets with enough oil for dough to float - about 1.5" deep, oil should be very hot - about 375-400 degrees F. Pan fry several at a time until they puff up and become light brown.Turn once during frying to ensure even browning.
6. Remove finished puris from hot oil and drain onto a sheet tray lined with absorbent paper towels.
6. Hold hot, but not covered, until service Serve hot.
