General Principles
1. Mix the “hand-vinegar” in a small container and use to moisten your hands to keep rice from sticking while you work.
2. Dip fingers into ”hand-vinegar” and rub palm together. Pick up about 1 ½ Tbsp. vinegar rice and shape into a roughly rectangular form (or “finger’) about 1 ½ x ¾ inches (4x2cm).
