Soybean sprouts, rinsed, tails trimmed 8 Cups
Kosher salt t.t.
Garlic clove, minced, peeled 2 ea.
Scallion, trimmed, chopped 2 ea.
Sesame oil 2 tsp.
Sesame seeds, toasted ½ tsp.
Black pepper, freshly ground t.t.
Method
1. Place the fresh soybean sprouts in a medium bowl, add 1 tsp. salt, and toss well. Heat a heavy-bottomed pot over medium high heat. Add the sprouts, cover, and cook, shaking pot over the flame 3-4 times, until steam shoots out from under the lid, about 2 minutes.
2. Drain, transfer to a medium bowl, and set aside to cool. Add the garlic clove, scallion, sesame oil, and toasted sesame seeds. Season to taste with salt and pepper. Mix well. Cover and refrigerate until chilled.
