Star Anise 10 pods
Fennel seed 2 Tbsp.
Szechuan peppercorns 3 Tbsp.
Whole coriander seed 1 Tbsp.
Whole cloves 5 ea.
Whole cumin seeds 1 tsp.
Whole black peppercorns 1 Tbsp.
Cinnamon stick ½ stick
Ginger powder, ground ¼ tsp.
Method
1. Combine all spices in a clean spice grinder and grind to a medium fine powder. Place in a tightly sealed container and use within 1 month.
2. When ready to use, measure appropriate amount and lightly toast the powder in a dry pan without oil until you can smell the aroma of the spices. Quickly move the toasted powder to another – cooler – pan or container so that it does not carry over cook and burn.
