Ingredient Amount
Romaine lettuce hearts 2 pk. (6 hearts, cleaned)
Dressing
Carrots, chopped 4 oz.
Onions, chopped 2 oz.
Celery, chopped 2 oz.
Orange, peeled ½ ea.
Ginger, minced 4 tsp.
Soy sauce, light 4 tsp.
Ketchup 4 tsp.
Rice vinegar 2 Tbsp.
Sugar 1 tsp.
Mayonnaise 4 tsp.
Vegetable oil ½ Cup
Salt t.t.
Method
1. Wash lettuce and cut into 1”, bite sized, pieces.
2. Make dressing by pureeing all ingredients EXCEPT oil together in a blender until smooth, then slowly add oil into blender, while running, to emulsify. Stop when mixture is homogenized.
3. Keep lettuce and dressing separate until just before serving
4. Toss lettuce with dressing several orders at a time.
