Crazy Cookie Cakes

This treat is great for you and a loved one or just to eat by yourself. Remember, this will be there until it’s gone, but then you can make more!

Ingredients:

  • 1/2 cup unsalted butter (1 stick; softened)
  • 1/4 cup regular salted butter (1/2 stick; softened)
  • 3/4 cup light brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg (room temperature)
  • 2 tsp pure vanilla extract
  • 2 cups unbleached all-purpose flour
  • 2 tsp cornstarch
  • 1 tsp baking soda
  • 1/4 tsp salt
  • Chocolate chips (as much as desired)

Instructions:

  1. Preheat oven to 350 degrees Fahrenheit
  2. Cream together butter and sugar
  3. Add in eggs and vanilla
  4. In a separate bowl combine all dry ingredients
  5. Gradually mix the dry ingredients into the wet mixture, minus the chocolate chips
  6. Once dough is formed, mix in chocolate chips by hand
  7. Chill dough for about 10 minutes
  8. Once chilled, place in a large skillet
  9. Flatten out so it is even around all edges
  10. Bake until golden brown
  11. Remove and cool
  12. Decorate with frosting and sprinkles if desired

St. Patrick’s Day Shamrock Shake*

Ingredients (makes one milkshake):

  • 1 ½ cups vanilla ice cream
  • 1/2 cup whole milk
  • 10 drops green food coloring
  • 1 tsp peppermint extract
  • Whipped cream
  • Maraschino cherry

Instructions:

  1. In a blender combine vanilla ice cream, milk, food coloring, and peppermint extract until smooth (about 30 seconds)
  2. Pour into a glass and top with whipped cream and cherry
  3. Place a straw inside the glass and enjoy!


*Yes, you could just get this shake from McDonald’s, but there's just something better about it being homemade.
