Hāngi
A Hāngi is a traditional Maori style of cooking that has been used for hundreds of years. It is still used throughout New Zealand today. It is a special way of cooking food under the ground using red hot rocks and steam.
The hāngi was very spiritual. Maori have a strong connection to the land and only took as much food from the land or sea as they needed. Maori Tradition said that if anybody walked over the hāngi while the food was inside cooking, the food was seen as spoiled and not able to be eaten.
In traditional hāngī cooking, food such as fish and kumara (sweet potato), were cooked in a pit dug in the ground. Today, pork, lamb, potato, pumpkin and cabbage are also cooked..
The Maori word for food is ‘Kai’. The kai was traditionally wrapped in flax leaves, but today people are more likely to use cloth sacks, foil and wire baskets. The Hāngī food is left in the ground for about three to four hours, when it's all finished cooking you will have delicious meat and vegetables, that all have a smoky, earthy flavour.
