Time to try....Butternut Squash!

Mirror, mirror on the wall who’s the most popular winter squash of them all?

That’s right! It’s this month’s featured vegetable, the BUTTERNUT SQUASH!

This beloved vegetable is delicious, versatile and filled with health benefits.

Butternut squash is loaded with Vitamin A, Vitamin C, fiber, phytonutrients (that have antioxidant and anti-inflammatory properties) and polysaccharides (a type of carbohydrate that digests slowly) that can help to regulate and/or control blood sugar. A single cup provides more Vitamin A than most people need in one day! Butternut squash can also help reduce the risk of diseases like heart and respiratory disease, cancer, diabetes, and arthritis.

Baked, boiled or steamed the butternut squash is known for its delicious nutty flavor and has managed to squash its way right into many culinary creations, like soup and stews. Don’t forget to save the seeds from your squash, they can be roasted in the oven and enjoyed as a healthy delicious snack.

You can find butternut squash in the produce section of most grocery stores. It has a pale yellowish, brown skin with a rich orange flesh on the inside. When picking it out make sure the butternut squash is heavy for its size with a hard tough rind that is blemish free, without soft spots. Most grocery stores will even carry pre-cut varieties if you’re looking for a time saver.
