Time to try....Snap Peas!

Sugar Snap Peas are a nutritiously dense and delicious vegetable that we often do not give enough credit to! This month, nutrition educators will bring sugar snap peas for students to try. Sometimes called just Snap Peas, they are important for healthy muscle development, providing more protein than a whole egg or a tablespoon of peanut butter in a 100 calorie serving (about ¾ cup), and contain very little fat. They are also a good source of dietary fiber, which keeps our gut microbiome healthy and happy. Compared to other peas, the pod of sugar snap peas is edible and crunchy, making it an excellent fresh snack!

Sugar snap peas are also very easy to store and cook. In order to preserve the flavor, color, and taste of fresh sugar snap peas, store them in the refrigerator and eat them within a few days or freeze them until you are ready to eat them. To preserve the flavor and the satisfying crunch of the sugar snap pea, limit cooking time to about 2 or 3 minutes.
