Poblano peppers are large, heart-shaped chili peppers with a mild flavor. They are larger than a jalapeño but smaller than a bell pepper - about the size of a dollar bill or note cards. Poblano peppers are harvested when they are a deep green color. If the poblano is picked later, it will have matured into a deep red color and the pepper will taste much spicier. In the store, look for poblanos with a tight, dark green skin. Avoid poblano peppers that are wrinkled or discolored.


Like other peppers, poblanos are botanically a fruit when they are growing but considered a vegetable by the USDA because of their nutrients and typical culinary preparation. Poblano peppers are rich in Vitamin A to support eye health and Vitamin C to boost your immune system. Poblano peppers are also a good source of fiber, as well as being low in fat, sodium, sugar, and calories.


Since poblano peppers have a mild flavor, they are a great addition to any dish. Some common preparations include: stuffed with meat and rice; dried into ancho chilies; roasted and ground into a mole sauce; or chopped and added to quesadillas or salsas.
