· worked as an IT instructor in TECKNOKIDS Egypt but that wasn't going well with my family commitments so started to work as a teacher in a school and later promoted to be the head for the foundation stage for 2 years .
· Art and crafts have always been my passion ,started Authentic Egyptian jewelry design and making workshop
· went to Alexandria in 2003 ,been affected very much by the Alexandrian cuisine ,used to meet some chefs and watch them while cooking their dishes ,and got to know their secrets!!
· Throughout these years I was always praised for my food and cakes which i used to make for my family birthday parties and the food I catered for some charity events
· then I decided to work in what I really like which are “Art and food”.....and to take more professional steps towards my passion ,so I started taking Wilton cake decoration classes and self taught via the internet and launched my business "Chocoholic Mama "which was in the beginning a home based business for making unique carved ,customized and 3D cakes and cupcakes and then grew up to be a culinary school for teaching cakes and cupcakes decoration techniques ,baking ,desserts making ,cake pops ,cookies ,cooking classes with different cuisines(Italian ,Chinese, Indian ,Egyptian ,Lebanese)and catering for parties and events ,running workshops for ladies and kids in some events and festivals ,distribution to some shops and cafes .
· this successful company had to be brought to an end to support the family decision to relocate to Australia on 22nd of October 2014

· Getting ready to have my own restaurant in Melbourne serving some of my recipes and fulfilling my passion of serving people food which is made with love .
HAWAWSHI IN THE ALEXANDRIAN WAY
· These recipe will give you about eight Hawawshi servings
· for the dough :
5 1/2 cups of all purpose flour
1 cup of oil
2 cups of warm water
1/4 tsp black pepper
1 tsp salt
parchment paper
· For the stuffing:
3/4 kg minced beef
1 big onion
2 tomatoes
1 green pepper
1 cup of chopped green coriander
1 cup of chopped dill
1 cup of chopped celery
2 tsp Chinese 5 spice
1 tsp paprika
1 tsp nutmeg
2 minced garlic cloves
1 tsp tomato sauce
1 tsp tomato paste
1 table spoon soy sauce
2 tsp salt
1 tsp black pepper
2 tsp butter
· Hawawshi is known for its spicy flavor so if you want ...you can add chilli powder to the beef mixture
and now let’s see how can we make it :
first we make the dough
1 -Add the flour ,salt ,black pepper and oil together and mix well.
2-Add the warm water and mix well with your hand again
3-Divide the dough into 8 equal parts and let them rest
Then preheat your oven to 300 c during this time you can prepare
the beef mixture
1- First cut the pepper into very small pieces and the tomatoes too but without seeds
2-Grate the onion
3-Chop the green coriander ,dill and celery into small pieces too
4-Add all the vegetables to the beef together with the nutmeg ,garlic, soy sauce ,tomato paste and tomato sauce ,chinese 5 spice, paprika ,1 tsp of butter ,salt and pepper.mix them all together with your hands
5-Divide the beef mixture into 8 balls like the dough
6-Put on the table some of the oil and a ball of dough
7-Roll out the dough as a circle and put the meat ball in the middle
8- Roll the meat ball as a circle
9-Close the dough on the meat like taking an edge and close the circle to the middle and so on… with all the edges till you cover the meat mix completely by the dough.
10-Brush the dough with butter to have a crispy Hawawshi or you can even spray it with olive oil and wrap it in parchment paper ,then put them in a tray
11-Put the tray in the preheated oven for about 20 min or till the dough gets crispy and the beef mix is well done
You can just put the Hawawshi in the oven for about 15 min then grill it on the charcoal BBQ grill for about 5 min, that gives it a wonderful flavor!! ..you would love to try it!!
