1/2 c. butter, softened
1/2 c. sugar
1/2 c. brown sugar
1 egg
1 tsp. vanilla
1 1/2 c. flour
1 tsp. baking soda
1/4 tsp. salt
1/3 c. cocoa
1 tsp. red food coloring
1/4 c. milk, if needed
1/2 c. chocolate chips
Preheat oven to 375 degrees. Cream together butter and sugars until light and fluffy. Add egg and vanilla. Stir in dry ingredients until just combined. If batter is too stiff, add a little milk until soft enough to stir in chocolate chips. Add chocolate chips. Using a small ice cream scoop, drop batter onto cookie sheet. Bake 10-12 minutes. Yield: 15 cookies (I got 24 using a small ice cream scoop).
Pumpkin Spice Cream Cheese Frosting
1 stick butter
1/2 stick cream cheese
2 tsp. vanilla
1/2 - 1 tsp. pumpkin pie spice, to taste
2-3 c. powdered sugar
Cream butter and cream cheese. Add vanilla and pumpkin pie spice. Add powdered sugar and beat until fluffy.
