Method: Halve or quarter the potatoes if they are large, otherwise keep them whole. Put them in a heavy skillet with the rest of the ingredients. Use enough chicken stock to cover. Cook covered on medium heat to simmer until the potatoes are almost tender. Remove the cover, raise the heat some, and continue to cook until the chicken stock evaporates and the potatoes get browned. The whole process takes a around 45 minutes. Plan ahead.
