Sesame Seed Vegetable Rice

Servings: 4

Ingredients:

  • 3 c. cooked brown rice
  • 1/2 c. sesame seeds
  • 3 tbsp soy sauce
  • 1 med carrot, diced
  • 1 green pepper, diced
  • 1 small onion, chopped
  • 1 stalk broccoli, chopped
  • 2 tbsp vegetable oil
  • diced tofu (optional)

Procedure:

Saute onion in oil. Add carrot, then green pepper and broccoli. Cover and cook until tender. If using tofu, add it just before the broccoli is tender. Add rice. Stir in sesame seeds and soy sauce.
