Cheesecake
Oven 275°F (that's correct)

Ingredients:
Crust:
1/2 c. graham cracker crumbs
1 T. sugar
1/4 t. cinnamon
1/4 t. nutmeg
Filling:
5 eggs, separated
1 c. sugar
2 pkg cream cheese (8 oz. each), softened
1 c. sour cream
2 T flour
1 t. vanilla
Procedure:
For the crust: Grease the bottom and sides of a 9 inch spring-form pan. Dust with a mixture of the graham cracker crumbs, sugar, cinamon and nutmeg.
For the filling: Beat egg yolks until thick and lemony. Gradually beat in sugar. Break up and add creamcheese. Beat until smooth. Add sour cream, flour and vanilla. Beat until smooth. Beat egg whites until stiff and dry. Gently fold into cheese mixture.
Pour the filling gently into the pan. Bake at 275° for 70 minutes. Turn off oven and leave 1 hr. without opening the oven door.
