Simple Good Lentil Soup

Servings: 6

Ingredients:

  • 1 lb. dry lentils
  • 2 qts water
  • 1 ham bone
  • 1 onion, chopped
  • 1 clove garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, chopped
  • 1 bay leaf
  • 1/4 t. dry mustard
  • salt and pepper

Procedure:

Wash and sort lentils; cover with water. Add ham bone, vegetables, bay leaf, and mustard. Cover and bring to boiling. Simmer for 1.5 to 2 hours or until lentils are very tender. (Note: Cook at low temp. Do not burn lentils. Burned lentils are worse than inedible. It is much better to cook slower and take longer than to cook too high and risk burning.) Stir occasionally. Remove bone, cut off meat and dice and return to soup. Season with salt and pepper.
