A no bake recipe---make it early
Servings: 6 dozen 2-inch cookies
Ingredients:
1 c. semi-sweet chocolate chips
3 tbsp white corn syrup
2 tsp instant coffee powder
1/3 c. hot water / bourbon (vary proportions to taste)
3 1/2 c sifter confectioner's sugar
1 c chopped walnuts
about 3 dozen vanilla wafers, finely crushed (1 3/4 c)
Procedure:
Melt the chocolate in a double boiler over hot, not boiling, water. Dissolve the coffee in the hot liquid (water/bourbon). Into the melted chocolate, stir the corn syrup, hot liquid, 3 cups of the sugar, walnuts and wafer crumbs. Form into one inch balls, Roll them in the remaining 1/2 c of suger. Store in a covered container for a day or so, to ripen. They keep a long time.
