Oven: 350°
Servings: one 9 inch pie
Ingredients:
9 inch graham cracker pie shell (or regular pastry shell if you prefer---baked)
4 egg yolks
pinch cream of tarter
2 cans steetened condensed milk
5 oz. bottled key lime juice
For meringue: ( But we like it with whipped cream even better.)
4 egg whites
1/4 c. suger
pinch cream of tarter
Procedure:
Blend the filling ingredients thoroughly and pour into the pie shell. If using meringue, whip the eggwhites and cream of tarter, gradually adding the sugar, until stiff peaks form, and spread atop the pie.
Bake at 350 degrees for five minutes (until peaks on meringue are light brown). Chill 3-4 hours.
Variation: omit the meringue. Garnish with whipped cream just before serving.
