INGREDIENTS (all amounts are approximate)
· 1 lb raw shrimp thawed and peeled (use the frozen uncooked farm-raised shrimp)
· pasta (angel hair works best)
· 3 tbls olive oil
· 3 tbls butter
· 3 cloves garlic
· ½ cup parsley
· lemon
· ¼ cup white wine
· parmesan cheese
DIRECTIONS
Make pasta according to the package directions and drain.
Put olive oil and butter in large frying pan and heat medium high to melt butter. Add garlic squeezed through a press. Immediately add shrimp and cook stirring and swirling just until it turns pink—do not overcook—about 3 minutes. Remove shrimp and add to pasta which you have just finished cooking and draining. Immediately add chopped parsley and wine to hot oil, butter, and garlic. Cook to heat—less than a minute. Pour mixture over pasta and shrimp. Mix all together. Sprinkle with cheese and serve with lemon wedges. Appox’ly 4 servings.
