3-4 large yellow onions, cut in large dice 1/2 stick unsalted butter
1 tsp kosher salt
2 sprigs fresh thyme
1 bay leaf
fresh ground black pepper to taste 1 tbsp sherry vinegar
1/4 cup dry sherry wine
3 cups high-quality beef broth
2 cups high-quality chicken broth 1 cup water
toast
shredded Gruyere cheese
Melt butter, add onions, sweat on med low for 45 min.
add seasoning, broth and water, simmer on med low for 1 hour Heat broiler
Add to bowls. top with cheese and toast.
Broil until top browns
