1 chicken cut into 6 pieces
1/2 cup of water 1 onion, big dice 1 tbsp Cumin
2 tbsp Paprika
2 tbsp Capers
1/3 cup sliced green olives 4 garlic cloves, thin slice
1 tbsp Oregano
1/4 tsp Cayenne
1 red pepper
1 green pepper
1/4 cup tomato paste
2 cups white long grain rice 4 cups chicken broth
Cut a whole chicken into six pieces, breasts 4 of them. Save wings and carcass for stock. Brown chicken pieces quickly in pan. Add of water midway
In a dutch oven, pour in tbsp of Olive Oil in and sweat diced onion for 5 min.
Add all spices, capers and olives. Cook for 1 min.
Throw in chopped peppers, 1/4 cup of tomato paste. Cook for a minute. Add rice and broth. Bring to a simmer.
Cover and bake at 350 degrees for 30 min.
