6 Bacon Slices chopped
6 Eggs
6 Asparagus Spears trimmed (or some other veg)
1 Green Onion chopped
1/4 Cup of fresh herb (dill, parsley, basil and/or chives)
1/2 cup Cherry tomatoes
4oz of Goat Cheese
1. Heat large skillet over medium heat
2. Cook bacon
3. Beat eggs with pinch of salt and pepper. Add onion and herbs
4. Pour into skillet with tomatoes and cheese
5. Lower heat and cover. Cook for 10 minutes
6. Flip and cook a few more minutes until set
7. Season with salt & pepper and serve
