Ingredients
3-5 links hot italian sausage
1 chopped onion
1 carrot diced
2 stalks celery chopped
4 cloves garlic
Crushed Red Pepper
italian seasoning
Bay leaf
Oregano and Basil

1 Quart Beef Stock
2 cups water
1/2 box elbow pasta
2 cans cannenelli beans, drained rinsed
Parmigiano-reggiano
Parsley
Slice sausage brown with a tble spoon of olive oil.
Remove sausage
throw in veg and sweat for 5 min. add salt and pepper
Then garlic, red pepper and bay leaf
dry seasoning
then 3 tblspns of tomato paste
saute 2min
add 1 qt of beef stock (or chicken and water
bring to simmer 5 min
skim oil
Add pasta and tsp salt
cook 10 min
add beans and simmer 5-8 min
serve topped with parsley and cheese
