4 Split Chicken Breasts with skin and bones intact
Salt & Pepper
6 tablespoons of olive oil
11/2 pounds of red potatoes cut into wedges
Juice of one lemon
1 medium garlic clove minced
1 teaspoon of fresh thyme leaves
Red pepper flakes
Heat oven to 450
Heat oil in non stick skillet and brown skin side of chicken, 5 minutes
Toss potatoes in salt & pepper and 1 tblspon of oil in a glass bowl.Cover with plastic wrap and microwave for 5-6 minutes. Shake bowl halfway
Put chicken in baking dish and bake until 165 temp. 15-20 minutes
Add oil to the skillet and add potatoes (not liquid residue) and brown. @10 min
Whisk remaing oil, pepper flakes, lemon juice, thyme and drizzle over chicken and potatoes
