1 tablespoon olive oil
12 ounces Linguica (or andouille) sausage
1 onion diced fine, plus a pinch of salt
3 pounds russet potatoes, peeled, sliced
2 teaspoons salt, plus more as needed
2 quarts chicken broth or water
2 pounds kale, trimmed, chopped, washed and drained
pinch of cayenne, optional
Slice sausage and cook on medium heat for 3-5 minutes until oil releases
Add onion with salt and cook and till soft and light brown
Pour in Chicken Broth and water
Add potatoes and cayennne, bring to boil
Reduce heat and simmer for ten minutes
Add kale, salt and pepper. Simmer for 45 minutes
Serve garnished with olive oil
