1/2 rack of ribs
1 Tablespoon paprika
1 Tablespoon brown sugar
1Tablespoon ancho chili powder
Salt and Pepper
Nana's Barbecue sauce (see the Sauces section of this website)
Vacuum sealer
Sous Vide Machine
Rube spices all over room temp ribs
Vacuum seal in a bag
Set sous vide machine to 119 degrees
Submerge ribs and cook for 10 hours
Heat grill to 550 degrees
Slather Nana's barbecue sauce on ribs and sear for 5 minutes per side or until properly charred and remove
Let rest for 7 minutes.
Serve with mashed potatoes, cornbread and extra sauce
