8 1/2 pound bone in pork shoulder
Dry rub
1/4 cup salt
1/4 cup sugar
1/2 tsp cayenne
1/2 tsp allspice
1/2 tsp dry mustard
1 tsp black pepper
1 tsp cumin
1tbsp of Ancho chili powder
2 tbsp paprika
Heat oven to 250
Allow pork to get to room temp
Rinse pork and pat dry
Coat dry rub on all sides
Put pork in Dutch oven
Fill 2 ramikins with 1 part liquid smoke and 2 parts water. Place next to pork and cover .
Cook pork for 12-15 hours until 200 degree internal temp
Remove from oven onto board and cool 20 min
Shred with forks, put in container and coat with Barbeque sauce.
