Ingredients:
1 head cauliflower (about 4 cups florets or you can use 2 bags frozen cauliflower)
1 medium onion, chopped
¼ tsp minced garlic
¾ c whipping cream
1 package of cream cheese
2 cans chicken broth
5-6 pieces cooked bacon (or ½ package of Real Bacon pieces)
8 oz cheddar
Salt and pepper to taste
Suggested Toppings:
Green onion
Bacon pieces
Cheddar cheese
Sour cream
Directions:
1. Wash and cut cauliflower florets. Put in microwave dish with a lid. Microwave for 9-11 minutes until soft. Mash with a fork.
2. Put onions and garlic in a stock pot. Cook on med-high until browned.
3. Add whipping cream, cream cheese, chicken broth, and bacon. Cook on med high until cream cheese is melted, stirring often.
4. Add cauliflower and cheddar cheese. Cook on med-high until cheese is melted. Take pot off burner to cool for 2 minutes.
5. Ladle soup into a blender and blend to desired consistency. (or you can use an immersion stick blender in the pot)
6. Pour in to bowls, sprinkle with desired toppings, and serve.
