Ricotta Cookies Recipe

Ricotta Cookies

Dough

1 lb margarine (soften)

4 c. flour

1 c. Ricotta cheese

2 egg yolks

Make dough with the ingredients above. Mix until smooth. Make 7 balls of dough and refrigerate overnight.

(Makes about 5 cups)

Filling

4 c. chopped nuts

3 T. Ricotta cheese

2 c. sugar

2 tsp. cinnamon

(Makes about 6.5 cups)

1) In large bowl, Mix these ingredients together to make the filling.

2) On a floured surface, using rolling pin, roll out (flatten) one ball of dough at a time. Spread 1/7th of filling and roll like a jelly roll. Tuck down ends. Place on cookie sheet. Repeat.

3) Bake 30 Min. or just until set and light brown at 375°

4) Sprinkle with confectionery sugar.

5) Let cookie cool slightly before slicing.
