- 2 pounds haddock filets
- 1 pound fresh tomatoes, seed removed, chopped
- 1 large tablespoon chopped fresh parsley
- 1 large garlic clove finely chopped
- Pinch of dried tarragon and mint
- Salt and freshly ground black pepper to taste
- 5 tablespoons olive oil
- ¼ cup freshly grated Parmesan cheese
- Lemon wedges for garnish (optional)
1. Place the fish in a buttered baking dish.
2. Mix together the tomatoes, parsley, garlic, seasonings, olive oil and cheese. Toss gently until well mixed. Spread evenly over fish filets.
3. Bake the fish in a preheated 350-degree over for 20 minutes, until cheese is nicely melted and tomatoes are soft.
4. Serve very hot with lemon wedges and pan drippings.
