- 4 boneless skinless chicken breast cut into 1” strips (about 1 lb.)
- 2 Tablespoons oil
- 2 cups sliced zucchini or 1 package (16oz) frozen vegetable blend
- 1 jar (15 oz) medium salsa (1 ¾ cup)
- ¾ cup of water
- ½ - 1 cup instant rice
- ½ - 1 cup (6 oz) Sargento Supreme Shredded cheese for Tacos
In 12” skillet, sauté chicken in hot oil over medium high heat 4-5 minutes or until done. Add vegetables, salsa and water. Bring to boil, cover and simmer 5 minutes.
Reduce heat to low, stir in rice. Top with cheese. Cover and cook 5 minutes.
4-6 servings.
