- 1/2 cup flour
- 2 eggs, lightly beaten
- 1 lb boneless chicken breast
- 1/4 cup grated parmesan cheese
- 1/4 cup bread crumbs
- 1 tablespoon butter, melted
- 2 large tomatoes, chopped (1 is enough)
- 3 tablespoons fresh minced basil
- 2 garlic cloves, minced
- 1 tablespoon olive oil
- 1/2 teaspoon salt

1. Place flour and eggs in separate shallow bowls.
2. Dip chicken in flour, then eggs; place in a greased 13 x 9 baking dish.
3. Combine the parmesan cheese, bread crumbs and butter; sprinkle over chicken.
4. Loosely cover baking dish with foil. Bake at 375° for 20 minutes.
5. Uncover and bake 5-10 minutes longer or until top is browned.
6. Meanwhile, In a bowl combine the remaining ingredients. Spoon over chicken.
7. Return to oven for 3-5 minutes or until tomato mixture is heated through.
