3 lbs of Yams
1 ½ cups of sugar
1 ½ teaspoons nutmeg
1 stick of butter
1 can evaporative milk
2 eggs
1 teaspoon of vanilla
Dash of cinnamon
Boil Yams and remove skin. Prepare Topping (see below).
Mix in remaining ingredients with boiled/peeled sweet potatoes.
Add filling to a 9 or 10 inch pre shell. Add Topping. Bake at 400 degrees for 50-60 minutes.
Topping
3 tablespoons of butter
2/3 cup of brown sugar
2/3 cup chopped pecans
OR
1 egg
2 tablespoons dark corn syrup
2 tablespoons brown sugar
1 tablespoon of butter
½ teaspoon maple flavored extract
1 cup chopped pecans
