German Apple Pancake Recipe

- 1 cup milk

- 3 large eggs at room temp.

- 1/4 cup flour

- 3 Tbs sugar

- 2 Tbs butter

- 2 medium cooking apples (Granny Smith) peeled cored and cut into 1/4 inch slices

- 1/4 teaspoon cinnamon

- Powdered sugar for dusting

- Lemon Wedges (optional)

1. Preheat over to 375 degrees.

2. In a medium size bowl, whisk together milk, eggs, flour and 2 Tbs of sugar

3. In a large heavy ovenproof skillet over medium-high heat, melt the butter.

4. Add the apples, cinnamon and the remaining 1 tbs of sugar.

5. Reduce heat to medium and cook, stirring occasionally for 2 to 3 minutes or until the apples are softened slightly.

6. Remove the pan from the heat. Pour the batter over the apples in the pan.

7. Place the pan in the over and bake for 30 - 35 minutes, or until the pancake is lightly browned and puffy.

8. Remove the pan from the oven and cut the pancake into wedges. Transfer the wedges to warmed serving plates, dust with powdered sugar, and serve with lemon wedges, if desired.

Serves 6 to 8.
