Roasting broccoli with garlic and olive oil is a great alternative to plain steamed broccoli. Liz came home from UVM with this recipe she calls "Jess's Broccoli" since she was introduced to this way of cooking broccoli by her college roommate - and still good friend - Jess. Thank you Liz and Jess!!
INGREDIENTS
Broccoli
5 or so garlic cloves, minced
Olive oil
Half a lemon
Cut the broccoli into 1-2 inch florets.
In a large, mix the broccoli florets and minced garlic. Drizzle with olive oil.
Mix together and let sit for up to an hour.
Preheat oven to 400°.
Put broccoli into a large rimmed cookie sheet/jelly roll pan (size depends on amount of broccoli).
Roast for about 20 minutes or until test done.
Put into serving dish and squeeze lemon juice over.
Two good things about my adding this often-used recipe to my online collection: (1) Liz will no longer have to answer my calls and texts asking what temperature to roast the broccoli at! and (2) I've finally learned how to spell "broccoli"!!
