I found this cookie recipe in an ad for chocolate chips. Although the cookies are delicious, I've only made these cookies once. The reason? They're a little more involved than chocolate chip cookies. So, I usually look at this recipe, then decide to make something else. Maybe now I'll be inspired to make them again!
INGREDIENTS
12 oz semisweet chocolate chips, divided
2 Tbsp instant coffee
2 tsp boiling water
1 1/4 c flour
3/4 tsp baking soda
1/2 tsp salt
1/2 c butter, softened
1/2 c sugar
1/2 c brown sugar
1 egg
1/2 c chopped walnuts
DOUBLE RECIPE
24 oz semisweet chocolate chips, divided
1/4 c instant coffee
4 tsp boiling water
2 1/2 c flour
1 1/2 tsp baking soda
1/2 tsp salt
1 c butter, softened
1 c sugar
1 c brown sugar
2 eggs
1 c chopped walnuts
Preheat oven to 350°.
Melt 1/2 cup (1 cup for double recipe) chocolate chips over hot water. Stir until smooth; cool to room temperature.
In small bowl, dissolve coffee in water. Set aside.
In medium bowl, mix flour, baking soda, and salt.
In large bowl, combine softened butter, sugars and dissolved coffee. Beat until creamy.
Add egg(s). Mix well.
Add melted chocolate chips. Mix well.
Gradually add the flour mixture, mixing well after each addition.
Stir in remaining chocolate chips and walnuts.
Drop by rounded tablespoonfuls onto cookie sheets.
Bake for 10-12 minutes.
Allow to stand 2-3 minutes before removing from cookie sheets.
