I've always had two pumpkin bread recipes... this one is my Aunt Hester's recipe and it makes three medium loaves. Eileen, a family friend, gave me a very similar recipe that makes two 9 "x 5" loaves. Both are fine!
INGREDIENTS
3 1/3 c flour
1 tsp cinnamon
1 tsp nutmeg
2 tsp baking soda
1 1/2 tsp salt
4 eggs
3 c sugar
1 c oil
2/3 c water
2 c pumpkin
Preheat oven to 350°, and grease three 8"x4" loaf pans.
Sift the dry ingredients (or whisk well to mix and lighten).
In a large mixing bowl, beat the eggs until they're "lemon clear."
Cream the sugar and oil and cream into the eggs.
Beat again, blending in the dry ingredients alternately with the water.
Add pumpkin.
Divide between the greased loaf pans.
Bake 70 minutes.
Cool on a rack. Wrap when cooled.
Eileen's recipe for two 9 "x 5" loaves uses a little less sugar and oil (2 2/3 cup sugar, 2/3 cup oil) and adds 1 tsp ground cloves, 1/2 tsp baking powder, 2/3 cup chopped walnuts, and 2/3 cup raisins.
