Eliza made this coleslaw when I visited, and I just had to make it myself when I got home. Delicious! She got the recipe from her grandmother, and from what I could see, the amounts are more of a guideline than an absolute rule. Eliza sometimes adds fresh herbs (e.g., oregano).
4 c grated cabbage, red or green
1 c grated carrots
1 apple, chopped
Handful golden raisins
Handful chopped walnuts (optional)
1 c mayonnaise
Combine cabbage, carrots, apple, golden raisins, and walnuts in a large bowl.
Mix in the mayonnaise and let sit for a bit.
Serve soon, or cover and refrigerate until needed.
