When blueberries were ripe in the field, Mom and I would pick a whole quart so that we could make Dad a birthday pie! This is a real blueberry pie... nothing like it.
INGREDIENTS
4 c (1 qt) wild Maine blueberries
1 c sugar
4 Tbsp flour
1/8 tsp salt
Juice of 1/2 lemon
Pastry for 9" two-crust pie
Preheat oven to 450°.
Pick over the blueberries if necessary.
Put blueberries in a good-sized bowl.
Mix the sugar, flour and salt, and mix with blueberries.
Add the lemon juice.
Make into pie. (In other words, pour into an unbaked bottom crust, then top with a top crust.)
Bake pie 10 minutes at 450°, then reduce heat to 350° and bake for 30 minutes more.
If you only have large cultivated blueberries, don't even think about it! But, if you're not in Maine during the summer for fresh berries, Wyman's frozen Maine blueberries are a good substitute. This is not the thick, gelatinous blueberry pie that you might see in restaurants... It's very juicy, and guaranteed to stain your clothes, tablecloths, cloth napkins and so on (you get the idea) if you're not careful.
