I have other recipes for oatmeal raisin cookies, but we keep coming back to this one. I say "we" because Ken is just as likely to make these cookies as I am. They're a real favorite! Full disclosure: this is the recipe for Vanishing Oatmeal Raisin Cookies inside the Quaker Oats box (is it still called a "box" since it's cylendrical?). Although the Quaker Oats people say that either their old fashioned or quick oats can be used, we only use the old fashioned oats.
½ c (1 stick) plus 6 Tbsp butter, softened
¾ c firmly packed brown sugar
½ c sugar
2 eggs
1 tsp vanilla
1½ c flour
1 tsp baking soda
1 tsp cinnamon
½ tsp salt (optional)
3 c old fashioned Quaker Oats
1 c raisins
Preheat the oven to 350o.
In a large bowl, beat the softened butter and sugars until creamy. If using a mixer, beat on medium speed.
Add eggs and vanilla; beat well.
Add the combined dry ingredients; mix well.
Add the oats and raisins; mix well.
Drop dough by rounded tablespoonfuls onto an ungreased cookie sheets.
Bake 8 to 10 minutes or until light golden brown.
Cool 1 minute on the cookie sheets, then remove to a wire rack.
Cool completely, then store tightly covered.
This makes about 4 dozen cookies, but since we usually make slightly larger cookies, we never get that many. ;-)
Sometimes we add some chopped walnuts along with the raisins. Or, for a change from a standard chocolate chip cookie, you can add chocolate chips to this recipe either in addition to, or in place of, the raisins.
