This recipe is a guilty pleasure! Usually I am not a fan of sweetened vegetables, and acorn squash doesn't need to be any sweeter than it is naturally. But I guess this is the exception that breaks the rule... I do enjoy acorn squash cooked this way!
2 acorn squash
1/3 c butter, melted
1/2 c bread crumbs
1/3 c chopped walnuts
3 Tbsp brown sugar
1/2 tsp salt
1/4 tsp nutmeg
Preheat oven to ????°.
Cut each squash in half lengthwise.
Remove seeds and fibers.
Place cut side up in a Pyrex dish or jelly roll pan.
Mix all the other ingredients, and divide between the 4 halves.
Bake for ??? minutes.
Serves 4.
