This is an old recipe from Uncle Bob's mother was given to me by my mother-in-law Shirley. I offer this recipe to you because I believe it's important to keep these old family recipes available.
16-oz package apricots
4 c water
2 c sugar
1/2 tsp salt
1/4 c flour
Vanilla extract or orange juice
Crust for two 9-inch double-crust pies
Soak the apricots in the water; then cook until soft.
Mix the softened apricots, 2 cups of the juice (add water to make 2 cups if necessary), sugar, salt, and flour.
Cook until thickened.
Add a little vanilla extract or orange juice.
Makes two good-sized double-crusted pies.
Bake at 375° for 25 minutes or so, like mince pies.
